The Cornell-Nanyang Institute of Hospitality Management (CNI) came together with Watson Wyatt, a global consulting firm focused on human capital and financial management, to host a Human Resource Roundtable in Singapore last week. The participants, who represented Carlson Asia Pacific, Carlton Hotels, Marriot International, Millenium & Copthorne International, Pan Pacific Hotels Group, Raffles Medical Group, Sentosa Leisure Group, Singapore Tourism Board, Six Senses Resorts & Spas, and TMS Asia Pacific mooted issues of employee engagement.

Direct communication was also deemed important. Fairmont hotel made the decision to communicate important issues to all of their employees through letters addressed personally, written in a language that is meaningful to the employees (English and Mandarin).

“Short, simple and clear messages” lead towards the most successful results, commented Mr. Regan Taikitsadaporn, Vice President of Human Resources for Marriot International.

Ms. Linda Scully, Corporate Director of Human Resources for Carlson Hotels, described their principal drivers of communications as “trust, the alignment of pride and ownership; and recognition, which can be rewarded in many ways more than simply money”. For example, recognition and learning came from TGIF afternoons once every month held with the General Manager of the hotel, who updates the employees on plans and happenings; similarly, the CEO does this at the corporate office.

Engagement surveys were still considered critical, despite the necessity to reduce costs within all the hotel groups.

The university aims to bring an academic and research perspective to courses otherwise considered vocational in nature. It also aims to widen access by making these courses affordable and easily accessible. "Institutes offering degrees and diplomas in these areas of study charge high fees and mostly attract the elite strata of society. However, our experience has shown that students from families with lower incomes have equal talent and interest but lack access," said S Inayat A Zaidi, dean, faculty of humanities and languages, JMI.

"This initiative comes in the wake of the tourism ministry's keenness to introduce research-oriented programmes as well as encourage academic studies and research in the tourism sector and the related field of heritage studies.

The university will start the Bachelor's and PhD programmes this academic year. "Since we require a well-developed infrastructure, we would offer other programmes in the coming years," he said.

It is typically made by distilling neutral grain spirits with herbs, predominately anise, florence fennel and grande wormwood. Other herbs such as angelica root, coriander, dittany leaves, hyssop, juniper, nutmeg, melissa, star anise, sweet flag, and veronica are also used. The color of the distillate is clear and is often bottled this way in a style known as Blanche or la Bleue, but it is also often found with a bright green hue. The coloring is added, either through the chlorophyll from steeping herbs like hyssop, melissa and petite wormwood in the liquor or adding artificial coloring.

We are now seeking several Food and Beverage Managers to direct its in-flight operations for the business and first class. This position is based in Middle East.


You will manage all aspects of food and service presentation to in-flight guests. You are a key member of the on board service team who will manage all Food and Beverage activities with the ability to plan and implement food delivery and service standards during the flight. Some of the key attributes are:



* Degree or Diploma qualified in hospitality.
* Minimum of 5-8 years in 5 star hotels as Assistant Food and Beverage, Executive Chef or Restaurant Manager.
* Excellent understanding food serving standards and staffing levels.
* Highly tuned communications skills.
* Proven track in food and beverage in leading resorts.
* Fluency in English.

Europe has endured steep revpar cuts akin to the US as a recent report in the Wall Street Journal details: "occupancies fell 8.9% in the first three months of the year compared to the same period last year, according to STR Global, an industry research group. Hardest hit were those in Eastern Europe, down 19%, and southern Europe, down 16%."

Yet as BusinessWeek reports "big chains such as Intercontinental, Marriott and Starwood were now launching niche luxury brands in Europe, in a bid to offer clients more glamour for the money they were prepared to spend on hotels. Last month, British-based Intercontinental opened its first boutique hotel in London, named Indigo.

Marriott International was also launching a boutique brand in 2010, with hotels set to open in Paris, Madrid, as well as Washington, Chicago and Los Angeles. Sheraton-owner, Starwood plans to open its first European luxury hotel in Barcelona this year and two in London next year."

One of the fastest growing hotel markets, India has seen the sharpest occupancy drops since the financial crisis and "major hotel chains have slashed room charges by up to 30 per cent because of falling occupancy rates on account of the recession." But a (well-founded) belief in the country's overall potential sees a continual spate of development deals. Le Meridien (Starwood) plans no less than five new hotels Local real estate major Emaar MGF launched yet another hotel in Jaipur and another regional player in the south of India, the Muthoot Pappachan group, plans a several hotels there.

The US is not to be outdone with the Washington Post reporting that Disney is planning a 500 room resort outside Washington D.C. Also in the fray in the big league category is Kansas City with its 1000 room hotel proposal downtown.

Like most others these projects, if they come to fruition, are planning on opening in a revived economy at least two years hence.
