JOBS| Chef de Cuisine

Qualifications

Minimum 2 years experience as Chef de Cuisine or Sous Chef in a hotel or restaurant of good standards; preferably with experience in luxury international brands. Qualification in Kitchen Production or Management will be an advantage. Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards will be essential. Basic Computer Skills in MS Office, and Recipe Maintenance System is preferred. Italian preferred.

Carlson Frees Resources For Expansion

Groupe Aeroplan Inc. (TSX: AER), a leading international loyalty management corporation, headquartered in Canada, today announced that it has entered into an agreement with Carlson Companies, Inc. (CCI) to purchase Carlson Marketing, a privately-owned, US-based loyalty marketing services provider for a net purchase price of US$175.3 million (Cdn$188.0 million), including transaction costs of US$6.5 million (Cdn$7.0 million) and subject to certain working capital adjustments.





In addition, Groupe Aeroplan expects to incur one-time costs of approximately US$15 million (Cdn$16.0 million), primarily related to the migration of technology infrastructure in the US out of CCI’s systems. The acquisition is subject to customary closing conditions and standard antitrust approvals in the United States and Canada. The transaction is expected to close by early December 2009, and will be financed with cash on hand and bank facilities.

Boulud Opening At Mandarin In London

Mandarin Oriental Hyde Park, London will introduce the award-winning cuisine of Lyon-born chef Daniel Boulud to the UK when Bar Boulud opens in the hotel in Spring 2010. Designed as a French inspired bistro and wine bar, Bar Boulud, London will follow the successful format of Bar Boulud in New York which has achieved significant acclaim.





Daniel Boulud’s culinary roots can be traced back to his family farm near Lyon, France where he developed a love of home cooking using fresh seasonal produce. While it is in New York City that Boulud has mastered the culinary scene, he was first trained in France by legendary chefs Roger Vergé, Georges Blanc and Michel Guérard. He moved to the US in 1982 where he first rose to fame as Executive Chef at the legendary Le Cirque. Boulud opened his own restaurant, Daniel, in New York in 1993, followed by Café Boulud, Bar Boulud, DB Bistro Moderne and, most recently, DBGB Kitchen and Bar, on the Bowery.

Largest Hotelier Group Takes Stance Against Last-Room Availability

On November 4, 2009, the Asian American Hotel Owners Association (AAHOA), the world’s largest association of hotel owners, achieved a new milestone by registering more than 10,000 members who own 22,000 hotels, which is forty percent of all hotels in the United States.





AAHOA strongly opposes (1) any attempts by the OTA’s to absolutely mandate last room availability, which would require the hotels to list their last available rooms on the OTAs at discounted prices, regardless of the market strength and demand for such rooms, and (2) allowing the OTAs to command rate parity and preclude hotel owners from offering discounts on their guest rooms that were greater than what was listed on the OTA website.
