Dana Hills High School graduate Marissa Gerlach is the new head chef at RAYA located inside the famed Ritz-Carlton, Laguna Niguel.

RAYA is a restaurant concept by acclaimed chef Richard Sandoval that showcases Pan-Latin Coastal cuisine prepared with sustainable seafood, local produce, natural and organic meats, and chef Sandoval’s signature Latin flavors.

"I have worked all over California, but I have found myself happy to come back to my home town," she said. "I became a chef because I love to cook. I’ve always been good with my hands and very artistic, which translates well into the culinary field. I love that there is never a dull moment and you never stop learning."

With more than 7 years of culinary experience, chef Marissa is passionate about the food she serves her guests in RAYA.

“Every product we use has a history, a story behind it. For instance, AquaFarm is a small local sustainable seafood farm in Southern California. I visited the facility where I learned so much about how using locally grown seafood not only offers the guests a much tastier product, but it helps lessen our carbon footprint,” she said. “It’s this type of experience that brings a story to the food we create and enjoy.”

Sonoma State Alum Named Top Young Sommelier in the World


Ian Cauble, a Sonoma State alumnus who is currently the head sommelier for the Ritz-Carlton in Half Moon Bay, was named "top young sommelier in the world" by French gastronomic society Confrérie de la Chaîne des Rôtisseurs, based in Paris.

“Ian Cauble is an incredibly talented sommelier,” said Steven Holt, director of public relations for The Ritz-Carlton in Half Moon Bay.

Cauble said it was Sonoma State's wine program that ignited his passion for food and spirits.

“I was especially hooked when I went on SSU’s wine class trip to Chile,” said Cauble, who majored in international business at the university with an emphasis in wine business and Spanish.

Upon graduation, Cauble took moved to Portugal where he worked for just two euros an hour at Royal Oporto in the Douro Valley, the country’s oldest port house, according to a spokesperson for Sonoma State University. He then traveled througout Europe, North Africa and India, exploring the wines and cuisines of these regions.

The California native has worked at some of the top wine destinations in America, including Aubergine and Le Quai restaurants in Newport Beach, Fleur de Lys in Las Vegas and two San Francisco Restaurants — Jardiniere and Spruce.

Cauble has also been awarded title of "top sommelier of the Western United States" by the Guild of Sommeliers in June 2011, and in 2008 he was voted one of the "best new sommeliers" in the U.S. by Wine and Spirits magazine.
